Hoppy doesn’t just mean bitter.

 

While you might know this, that phrase is my mantra when teaching people about beer. While hops do bring with them varying doses of bitterness, the huge variety of hops available today bring far more than a bitter taste. They bring with them a pretty large spread of flavors and aromas, too.

 

Summit hops were originally created by the Dwarf Hop Association in 2003 and are a combination of a variety of hops that were cross pollinated to create an extremely useful bittering hop that can be stored for 6 months with only a 15% decrease in alpha acids.

Source – Cross pollination of Lexus and an unspecified male. Summit was created from a variety of plants including Columbus, Nugget, and other USDA varieties. Bred at the American Dwarf Hop Association and released in 2003
Brewing Usage – Bittering
Aroma – Spicy and earthy with a slight garlic hint. Citrus tones including pink grapefruit, orange, and tangerine
Flavor – Pungent, spicy citrus with a slight onion or garlic flavor.
Alpha Acids – 16-19%
Beta Acids – 3.3-6%
Possible Substitutions – Columbus, Millennium, Simcoe, Warrior
Beer Styles – IPA, Black IPA
